REVIEW: Rainbow Dust - Pro Gel
Whether you're a professional baker, you dabble, or you just like to get involved with your kids - the best food colouring out there (in my opinion) is Rainbow Dust Professional Grade Gel.

These cupcakes are some I made for an Alice in Wonderland first birthday party. I simply painted the gel onto the inside of a Lakeland easy-grip piping bag and then added the white buttercream. There are a number of ways you can get a similar effect to the below (e.g. colour buttercream and put the different colours into one piping bag), but this one ensures you get the brightest colours which was the effect we were going for for this theme.

The Pro Gels are so strong you only need the tiniest bit, rather than some supermarket colours where you need a whole pot to get your desired colour. Why is this important? The more colour you add to your cake mixture or buttercream, the more runny it will become. This can be a huge problem with buttercream. Too runny and it won't keep its definition. The number of times I used bad quality food colouring and ruined my buttercream entirely.
With a strong food colour, comes its own problems though....but, I've worked out (over time) that Fairy Liquid is the best at getting it off!
